Apple Bacon Cheddar Bake
Tart green apples, crunchy bits of bacon, and gooey cheddar… topped with a southern style crust and warm maple syrup… is it a bountiful breakfast or a savory dessert?
6 slices Bacon, fried crisp and crumbled
2 cups sliced Granny Smith apples
2 tbls Sugar
2 cups grated sharp Cheddar cheese
2 cups Bisquick
2 cups Milk
6 Eggs
Maple Syrup
Preheat oven to 375 degrees. Evenly distribute apple slices in greased 9 X 13 inch baking dish*. Top evenly with cheese, then bacon crumbles. Whisk eggs, milk and Bisquick together. Pour batter over apples and cheese gently. Bake in 375 degree oven for 35 to 40 minutes, until lightly browned. Serve with maple syrup. Serves 8 to 10 people.
*Note, you can also prepare these individually in 8 greased ramekins dividing ingredients evenly. Bake for 35 to 40 minutes, until lightly browned.”
Blueberry Bread Pudding

3 to 4 Blueberry Muffins (homemade or bakery)
1 1/2 c Milk
2 tbsp Honey
3 Eggs, beaten
2 tbsp Butter
1 c fresh or frozen Blueberries
2 tbsp grated Lemon Rind
Powdered Sugar
Preheat oven to 350°. Crumble muffins into a greased 1 quart casserole. Mix milk and honey with beaten eggs; pour over muffins. Dot with butter and top with blueberries. Sprinkle with grated lemon rind. Bake for 40 minutes or until set. Sprinkle with powdered sugar and serve.
Serves 4 to 6.”
